Every home-maker, always has this frequent question in her mind, “What’s should I cook for dinner tonight?” There are times when we are tired through the day and lack the energy to cook a complete meal, when kids want to eat something interesting but you do not want them to have some unhealthy junk food. I tried this recipe when I was unwell and cooking entire meal was difficult for me. I had some steamed kidney beans kept in refrigerator, and some fresh veggies. This one Soup has Proteins from kidney beans, Carbs from Macaroni and Fiber from veggies. It is a complete meal in itself. Light on stomach and healthy for body and super easy for the Mommy/Daddy. As cooking is not just an art, not just a responsibly, not just a duty, but also the need to satiate one’s hunger.
(Serves four. Preparation time – 10 mins, Cook time: 30 mins)
- Macaroni Pasta (any small sized pasta) – 1/4 Cup
- Kidney Beans (soaked and steamed) – 1/4 Cup
- Tomatoes – 4 medium
- Onion – 1 medium
- Carrot – 1 medium
- Beetroot – 1/2 small
- Garlic – 2-3 cloves small to medium
- Ginger – one inch
- Coriander – Handful Chopped
- Butter – 3 tbsp
- Oil – 2 tbsp
- Salt – as per taste
- Dry Oregano – 1 tsp
- Dry Basil – 1/2 tsp OR mixed herbs can be used
- Black Pepper – crushed 1/2 tsp
In a Sauce Pan, Bring water to boil. add some salt and oil to it. As water starts boiling add Pasta to it.
In a pressure Cooker boil onion and tomatoes together in one container and Carrot and Beetroot (peeled and diced) in another container till they are soft. Grind puree of Tomatoes and Onion together and sieve them, so that the tomatoes seeds and skin does not affect the texture of our soup. Now grind the Carrot and Beetroot but do not sieve it, As it will give volume to the soup and also keep all the fiber intact.
Meanwhile as the pasta is boiling, heat a deep pan, add butter and finely chopped garlic to it. Add herbs, later add both the purees and steamed kidney beans to it. Now add cooked pasta to the soup. To dilute it to a soup consistency, Add the water in which pasta was cooked, it gives smoothness to the soup or sauce, therefore, cornflour is not required. This water already has some salt so add salt accordingly. Now add grated Ginger to it. Let it simmer on low flame for 8-10 mins so that all the flavors are absorbed by the kidney beans and pasta. Turn the heat off and add finely chopped Coriander.
