Red Velvet Cake

The Red Velvet Cake is a symbol of love. So let us start the new year with this symbol of love and spread some delicious love around. Whenever I thought about red velvet cake, the first thing that came to my mind was the food colour. Honestly, I am not very fond of using food colour. So I kept thinking and trying just to avoid using food colour. I finally attempted a cake, in which although the colour is not as perfect as the artificial colour but it is completely natural and very delicious.

What if I want to add artificial food colour for the perfect colour, will the recipe change?

No, not much, You need to increase the quantity of milk and buttermilk by 1/4th cup each to maintain the consistency. Although using artificial food colour in baking is quite often, right from macaroons to the rainbow frosting. Therefore this is an absolutely personal choice you have to make!

Will I get the flavour of beetroot?

No, Beetroot is quite a neutral flavoured recipe. Moreover, we have flavours of chocolate and vanilla which overpowers the subdude flavour of beetroot.

Heart-Shaped Cake without moulds?

I am a home-baker, most of the things that I learned is by trial and error. There are many things that I still haven’t mastered. However, this does not prevent me from attempting new delicacies. So I overcome my weakness with a dash of smartness! 😉 It is practically impossible to have all kinds of different shape moulds every time you bake a cake. So if you want to make any unique shape, you can use this idea. Moreover, if like me you are not perfect at slicing the cake from the center, even then you can use my idea for a perfect hassle-free cake slices.

Serves 5-6 persons


For Cake

Preparation time: 30 mins
Baking time: 15-20 mins

  • All Purpose Flour : 2 1/2 Cup
  • Cocoa Powder: 3 tbsp
  • Butter: 1/2 Cup
  • Sour Cream: 1 Cup
  • Vanilla Extract: 1 tsp
  • Sugar : 1 1/2 Cup
  • Milk: 1/2 Cup
  • Buttermilk: 1/2 Cup
  • Eggs : 2 nos.
  • Fresh Beetroot juice: half Cup
  • Baking powder : 1/2 tsp

Cream Cheese Frosting

Preparation time: 20 mins

  • Cream Cheese: 450 gms (2 packs)
  • Whipping cream (about 30-35% fat): 200 gms
  • Sugar: 1 1/2 Cup (300gms)
  • Vanilla Extract: 1 tsp


In a large mixing bowl take soften butter, whisk it with an electric blender for a couple of minutes, till it is light and fluffy. Now add sugar and beat it, till all the sugar is dissolved. It time now to add eggs. But be sure that you add just one egg at a time and beat it again. Now add the sour cream and vanilla extract to the mixture and blend again.

It is now time to add the dry ingredients to the wet mix. Gradually sift the flour, cocoa powder and baking soda to the mixture. While incorporating the the dry mix alternatively add the milk and butter milk mixture. As you blend everything together, your cake batter is almost ready. Last but not the least, adding the natural colour, add the beetroot juice and mix well. The cake batter is completely ready now.

Baking the Cake

Line a large baking tray, (the one I used is 12 inches by 14 inches. You can use any standard size) with baking paper and spread the cake batter evenly. Dab the baking tray on your work surface, so that if there are any air bubbles they will be released. Bake your cake in a preheated oven for about 15-20 mins on 180 degree Centigrade. Once the Cake is baked, let it rest for about half an hour or so before we start working on its decoration.

Cream Cheese Frosting

In a large mixing bowl, add cream cheese blend it for a minute or so then add powdered sugar. I recommend to sieve the sugar as it will ensure that there are no lumps found. As the sugar is dissolved add chilled whipping cream and vanilla extract to the mixture and blend it till you achieve stiff peaks. Your cream cheese frosting is ready.

Decorating the Cake

Cut a heart shape on a chart paper and with that paper cut out, make two heart shapes cake cutouts for the two layers of your cake. Place the cake on the cake stand and apply generous amount of frosting on the cake surface. Then place the second layer and repeat the process.
