Cream Cheese Cookies in Two Ways

The super delicious, melt in mouth, smooth creamy, moist yet crispy cookies are simply the best. I can fall short of adjectives to describe these little piece of joy. The star ingredient of this mouth watering relish is cream cheese. Until recently, I was quite unaware of the potential of wonderful ingredient. But the more I explore it, the more versatile I find it. Let us together go on a journey of exploring flavours and ingredients. and do try these cookies and enjoy this treat to yourself and your loved ones.

Serves about 20-25 cookies
Preparation time: 20 mins

Refrigeration time: 2 hours
Baking time: 15-18 mins

Ingredients

Double Chocolate Cookies

  • Butter: 1/2 Cup
  • Fine Granulated Sugar:1/2 Cup
  • Brown Sugar: 3/4th Cup
  • Cream Cheese: 1/2 Cup
  • Milk: 1/4 Cup
  • Vanilla Extract: 1 tsp
  • Espresso Powder/Coffee Powder: 1 tsp
  • All purpose flour 3/4th Cup
  • Cocoa Powder: 1/2 Cup
  • Baking Powder: 1 tsp
  • Choco-Chips: 100 g

Chocolate-Chips Cookies

  • Butter: 1/4th Cup
  • Fine Granulated Sugar: 1/4th Cup
  • Brown Sugar: 1/4th Cup
  • Cream Cheese: 1/4th Cup
  • Milk: 1/8th Cup
  • Vanilla Extract: 1 tsp
  • Espresso Powder/Coffee Powder: 1 tsp
  • All purpose flour 3/4th Cup
  • Baking Powder: 1 tsp
  • Choco-Chips: 80-100 g

Procedure

Most of the Process for both the cookies is the same. In fact the ingredients and its proportion is also same. The only difference is cocoa powder, and due to its bitterness the sugar contents increases. So let’s start the process.

Take room temperature butter and start beating it with the help of hand mixer or stand mixer till it is light and fluffy. Now add granulated sugar and blend it again, then add cream cheese and keep mixing. now add brown sugar and later add milk, Vanilla extract & coffee powder

This process is the same for both the type of cookies. However, we cannot use the above batter for both the cookies. As we require lesser sugar for Chocochips Cookies as compared to Double Chocolate Cookies.

Now sift in the dry ingredients mix to this batter (all purpose flour & baking soda; cocoa powder for Double Chocolate cookies) and make a dough. Lastly, add chocochips, and refrigerate it for minimum of 1-2 hours. However, the dough can stay there for about 2-3 days as well.

Once you remove the cookie dough from the fridge, it will be more manageable. Howbeit, you still would need some dry flour to dust your hand to make a crack free ball. Otherwise the cookies will have a more evident crack just from there.

Bake the cookies at 180 degree celcius for about 15 minutes. Your melt in mouth cookies are ready. let it rest on baking tray for about 5-10 minutes. I know it is very difficult to wait, as the aroma is simply irresistible. These will little crispy from outside and very soft from inside. Just like a tiny cake. These cookies will be your new friend of tea, coffee and milk.

My kids were super excited to see and smell the aroma which was spread in the house after baking.
