The Brownie Pinata Cake (Eggless)

Who doesn’t like surprises? What can be better than a surprise inside a cake! When the cake is brownie which is super simple to make, super delicious in taste, and covered with epic frosting for a chocolate lover, what can be better than that?

It was my son’s fifth birthday, like every mother feels, I too felt I should make something special and different for him. So I decided to make a Pinata Cake for him. As the colorful confectioneries came pouring out of it, the happiness of my child had no bounds! It paid off my efforts! You too try this recipe, which looks difficult but it is very simple and doable! If I can make it so can you! This is a perfect cake for birthday parties!

Something different than the currently trending SMASH IT Pinata Cake, this one promises that you would surely DIG INTO IT.

Serves 7-8 persons;

Makes about 12-16 pieces;

Can also be distributed in a 7″ and 5″ cake mold making a 5 layered cake


For Brownie

Preparation time: 30 mins
Baking time: 15-20 mins

  • All-Purpose Flour: 1 and 1/2 Cup
  • Cocoa Powder: Half Cup
  • Coffee Powder: 2 tsp
  • Baking powder : 1 tsp
  • Butter: 1 Cup
  • Bittersweet Chocolate (50% dark): 200g
  • Cream Cheese: 1 Cup
  • Vanilla Extract: 1 tsp
  • Sugar : 1 1/2 Cup
  • Milk: 1 Cup
  • Chopped Walnuts: As required

Chocolate Fudge Frosting

Preparation time: 30 mins
Cooling time: 30 mins

  • Butter: 1/2 Cup
  • Powdered Sugar: 3/4th Cup
  • Vanilla Extract: 1 tsp
  • Cocoa Powder 1/4th cup
  • Fresh Cream: 1/2 Cup
  • Bittersweet Chocolate (about 50% dark): 100 gms


For Brownies

On a double boiler, melt chocolate and butter together. As and when it melts add sugar. Remove from the flame and add cream cheese and mix it well. You may substitute cream cheese with sour cream or hung curd. It is now time to add the dry ingredients. Sift all-purpose flour, cocoa powder, coffee powder, and baking soda into the wet mixture. Gradually add milk and mix everything together. Now spread the batter on a baking tray and sprinkle some chopped walnuts. I used a baking tray of 14″ X 12″. A smaller sized tray can also be used, just the thickness of the brownies would be more. One can also bake in circular cake mould of 7″ and 5″ by distributing the batter in a ratio of 70% – 30%. As for the final assembly of this pinata cake we would need 3 layers of 7″ brownie and 2 layers of 5″ brownie. Bake for 20 mins in a preheated oven at 180 degree celcius.

Chocolate Fudge Frosting:

In a large mixing bowl, with an electric blender, beat butter till it is light and fluffy. Now add sifted confectioners sugar or powdered sugar. Blend it well again. Now add cocoa powder and Vanilla Essence and mix it well.

On a double boiler, melt chocolate and as it melts, add fresh cream. Add this ganache to the buttercream mixture and mix well. Cover it with cling wrap and refrigerate it for half an hour. Your frosting is good to go! This is also an ideal base frosting for fondant. As it is thick and sticky, it holds the fondant well. Unless the climate of the region is too warm and humid. After frosting the cake with this frosting, it can also be kept outside for about 3-4 hours and it will be as it is!

Assembling the Pinata Cake

The first layer of the Pinata cake should be a regular layer but for the next two layers, make a hole in the center with a cookie cutter or a glass or so just like a donut. While making a hole in the center of the two layers of cake, one thing that you have to be careful, that they should be exactly in the same place. Generously cover with the frosting discussed above between each layer. The small well that we created, you can stuff with the goodies of your choice! Here I have used colored gems and sugar sprinkles in different shapes. Top it again with another layer of cake to cover this well. Evenly cover it with the frosting and decorate the outer of the cake as per your discretion. Check out the video below and see the complete process in detail.
