Red Velvet Surprise CupCakes

“Love is in the Air!” not just air but in everything that you can think of! Love is also hidden in my little Red Velvet Cupcake! I once read somewhere, “All you need is love!” but a little cupcake now and then doesn’t hurt either! I think nothing better than a little cupcake to celebrate love. This Valentine’s day shows some love by treating them to beautiful surprises. My latest eggless red velvet cupcake is that small bunch of happiness that your loved one will certainly adore! Life is short so express your love to your loved one through my tiny surprise! Love is one of the more natural and unadulterated emotion, so why do we need artificial colour to celebrate it? Lets GO NATURAL, just like LOVE itself!

Serves 7-8 persons;

Makes about 16-18 pieces;

Ingredients

For CupCakes

Preparation time: 30 mins
Baking time: 15-20 mins

  • All-Purpose Flour: 1 and 1/2 Cup
  • Cocoa Powder: 2 tbsp
  • Baking powder : 1 tsp
  • Butter: 1/2 Cup
  • Cream Cheese: 1/2 Cup
  • Vanilla Extract: 1 tsp
  • Sugar : 1 1/4 Cup
  • Fresh Beetroot juice: 1/2 Cup
  • Buttermilk: 1 Cup
  • Vinegar: 1 tsp
  • Baking Soda: 1/8th tsp
  • Heart shaped sprinkles for stuffing: as required

Butter Cream Cheese Frosting

Preparation time: 10 mins
Cooling time: 30 mins (option

  • Butter: 1/2 Cup
  • Cream Cheese: 1 Cup
  • Powdered Sugar: 3/4th Cup
  • Vanilla Extract: 1 tsp

Procedure

In a large mixing bowl add butter and sugar, blend it well till it is light and fluffy, then add cream cheese and blend it well again. Now sift the dry ingredients (flour, cocoa powder and baking powder) Mix in the flour by gradually adding buttermilk to the batter. It is now time to add the natural coloring agent, fresh beeroot juice. After blending it in the batter, add final two ingredients vinegar and baking soda. Add soda on vinegar, as it reacts best with the help of vinegar.

Now fill this batter in cupcake moulds and bake it in a pre-heated oven for 15-20 mins at 180 degree celcius.

In the meanwhile we will prepare the frosting for the cupcakes. As we all know, Cream Cheese frosting suits best for the red velvet cake. But I am making this with butter instead of fresh cream.

Butter Cream Cheese Frosting

In a large mixing bowl add room temperature butter blend it till it is light and fluffy. Now add room temperature cream cheese and blend it well. Now add vanilla essence and powdered sugar and blend well. Your frosting is ready! Refrigerate it for half an hour, this will aid in better piping.

Making the Pinata Cupcakes

As the cupcakes are out of oven, let it rest for sometime till they cool completely. Once they are cooled, with the help of a knife, make a small circle on top of the cupcake and remove the top layer neatly. Stuff the goodies or whatever you want to store/hide! Now cover it again with cake-top that we removed and pipe it with the delicious buttercream cheese frosting! Your Surprise Cupcake is ready for your Chosen one!
