CHEESECAKE- a sinful delight! Come-on! We must admit that cheesecake is one of our guilty pleasure, that we are apprehensive about trying at home! I have formulated a very simple, doable and quick recipe of cheesecake which very delightful but minus all the efforts. Moreover, this cheesecake has goodness of both Vanilla & Chocolate. So here it goes! Hope you Enjoy and do try this yummilicious recipe at your home and win accolades of your family, friends and loved ones!
Serves 5-6 persons
Preparation time: 30 mins
Setting and cooling time: 5-7 hours
- Oreo Biscuits : 150 g (1 1/2 Packets)
- Butter: 2 tbsp
For Vanilla Custard Layer
- Milk: 1/2 lt (approx. 2 1/4 cups)
- Sugar: 1/2 cup
- Custard Powder: 1/3rd Cup (40 g)
- Cardamom Powder: 1/2 tsp
- Vanilla extract: 1 tsp
For Chocolate layer
- Cream cheese : 1 1/2 Cup
- Fine Granulated Sugar: 1 cup
- Vanilla extract: 1 tsp
- Dark chocolate (50%): 1 1/4th Cup (200 g)
- whipping cream: 3/4 cup (200 g)
For Garnish (you may leave it simple too)
- Whipped cream
- Oreo chocolates (any topping of your choice)
Preparing The Crust
- Crush the oreo biscuits in a grinder and add the melted butter to the above mixture
- Line a baking tray with parchment paper and spread the mixture evenly at the bottom as shown in the picture below
- Your crust for the cheesecake is ready
Preparing The Vanilla Custard Layer
Boil the milk in a Saucepan. In the meanwhile, in a small mixing bowl, add the custard powder, sugar, cardamom powder and vanilla extract in 1/4 cup of milk (kept aside from half lt milk). Mix it well. As milk starts boiling, remove it from the flame and add the mixture. Keep stirring continuously, and heat it again. You would see that the mixture would thicken a bit. Allow this mixture to cool down. Make sure that you keep stirring it. As if it is left ideal the custard will start holding its shape. (This step is very important because, if the custard milk is hot then it would melt the butter that is holding the crust together. The crust would get soaked in the vanilla custard). Once the custard has cooled down, pour the vanilla custard over the crust layer and dab it on your work surface so that it is evenly distributed and there are no bubbles. Leave it for setting in the refrigerator for about an hour.
Preparing The Chocolate Layer
Take the cream cheese and granulated sugar in a bowl and whip it. Add the whipping cream and vanilla extract to it. (One thing that must note here is that many times whipping cream contains sugar, if your whipping cream already has sugar, reduce the sugar amount by half) Now blend it till you seeing soft peaks to your mixture. Now add the melted dark chocolate and blend it well. (For melting dark chocolate use the double boiler). This is very similar to the chocolate frosting used for cakes. Pour this mixture on the vanilla custard layer of your cheesecake. Spread it evenly over the surface with the help of a spatula. Allow it to set in the refrigerator for 4-6 hours.
Garnishing The Cheesecake
Your mouth-watering Choco-vanilla cheesecake is ready! You may dig into it right away. However, if you love to make yummy and good-looking dishes. Take the whipping cream in a bowl, (If you are using dairy whipping cream/fresh cream add sugar and vanilla extract) whip it till stiff peaks are formed and transfer it into a piping bag. Make any design as per your discretion, along the borders and top it with toppings of your choice (I have used oreo chocolates here).
