Serves 5-6 persons
Preparation time: 30 mins
Setting and cooling time: 5-7 hours
- Marie Biscuits / Graham Crackers / Butterkeks : 200 g (1 Pack)
- Butter: 25 g or about 2 tbsp
- Sugar : 1/4th Cup
For Cheesecake Batter
- Cream cheese : 350 g / 1 1/2 Cup
- Fine Granulated Sugar: 1/4th + 1/4th cup
- Vanilla extract: 1 tsp
- Condensed Milk: 3/4 Cup or 200g
- Whipping cream: 3/4 cup (200 g)
- Cornflour: 2 tbsp
- Strawberries: 1/2 Cup chopped
- Sugar 1/4 cup
For Garnish (you may leave it simple too)
- Mango slices for making the rose
- Strawberry Crush
- Mint Leaves
For The Crust
Grind or crush the biscuits and add melted butter and sugar to it. Mix well. Cover your cake tin with parchment paper. Now spread the mixture evenly in the cake tin and press it with the help of a flat base glass / bowl. Now bake it in a pre-heated oven at 180 degree Celcius for mins.
The Cheesecake Batter
In a large mixing bowl, add cream cheese and blend well. Make sure that your cream cheese is at room temperature. Scrape the bowl well from the sides so that you achieve smooth and even consistency. Once it is blended well add 1/4th cup sugar and mix well. It is now time to add Condensed milk. Blend it well again. Once everything is blended well. Make a thick slurry with corn flour and 1-2 spoons of water and and mix it well to your batter with a spatula.
In another mixing bowl add whipping cream and blend it. Gradually keep adding sugar to it. I used a dairy whipping cream without any added sugar. If you are using a non-dairy whipping cream, it might be already sweet. Therefore be careful while adding sugar. Keep blending the cream till you achieve soft peaks. Now gently fold in the whipped cream to the cream cheese batter.
Technique of Baking a Cheesecake
Cheesecake is not baked like any other regular cake. For best results it needs to be steamed in the oven. therefore we need to cover it with aluminium foil, so that there is not seepage of water into the batter.
Bake the Cheesecake for 50 mins in a preheated oven for 180 degree Celcius. Even after baking let it remain in the oven for another 40-50 mins. After that refrigerate it for minimum of 4 hours. I know this is a long waiting time. but trust me, it’s absolutely worth it!
In a pan mix chopped strawberries, sugar and salt. Cook it for about 5 mins on medium flame. Your Strawberry Crush is ready. If you like you can use any ready made fruit crush too.
Garnish the Cake
I decorated the cake with Rose made by Mango slices and strawberries crush. You can decorate it as per your wish.
